1 cup shortening
2 tsp baking soda
12 ounces semisweet chocolate chips
2 cups white sugar
15 ounce can of pumpkin puree
4 cups all-purpose flour
2 tsp ground cinnamon

Directions

Preheat the oven to 375 F (190 C). Mix the sugar, shortening and vanilla in a bowl until they’re light. Put the cinnamon, baking soda and flour in another bowl. Stir this into the creamy mix. Mix them well. Add the chocolate chips and stir. Put teaspoonfuls of the mix on a baking sheet. Bake the cookies for 15 minutes.

Pumpkin Cookies Recipe II

Ingredients

1 cup white sugar
1 cup canned pumpkin
2 cups all-purpose flour
1 egg
1 teaspoon vanilla extract
1 teaspoon milk
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 teaspoons baking powder
1/2 cup vegetable oil
1/2 cup chopped walnuts
1 cup semisweet chocolate chips

Directions

Preheat the oven (375 F / 190 C). Put pumpkin, sugar, vanilla, vegetable oil and egg in a bowl. Mix them. Put the nutmeg, flour, baking powder, baking soda and cinnamon in another bowl.

2 eggs
1 cup sugar

Beat and add the eggs, one at a time. Add the pumpkin and vanilla, mixing until they become smooth. Add in the flour slowly. Stir until there is a smooth batter.

1 1/2 cups dark brown sugar
1 teaspoon vanilla extract
1/2 cup pecan halves
10 ounces chopped white chocolate
1 cup solid pack pumpkin puree
2 eggs
1 cup unsalted butter

Directions

Mix the brown sugar and butter. Add the eggs, vanilla and puree. Blend them well. Mix the pumpkin spice, soda and flour. Pour into the other mix. Add the pecans. Put chunks on cookie sheets and bake for 20 minutes (5 minutes).
